Method
- Step 1: Rinse the adzuki beans under cold water to remove impurities.
- Step 2: In a pot, combine the rinsed beans with 3 cups of water and bring to a boil over medium heat.
- Step 3: Reduce heat to low and let the beans simmer for about 1 hour, or until tender, adding more water if necessary.
- Step 4: Drain the beans and return them to the pot. Add in the sugar and a pinch of salt.
- Step 5: Cook over low heat, stirring frequently until the sugar dissolves and the paste thickens, about 10-15 minutes.
- Step 6: Once thickened, remove from heat and let it cool. Use immediately or store in an airtight container.
Notes
Store Anko in an airtight container in the refrigerator for about a week, or freeze it for longer storage.
